It has been quite a long time since I last posted a recipe. Somehow life took over, and I wanted to take a little break from writing. But that doesn’t mean that I stopped baking. I experimented a lot over the last weeks and months. From making my first ever sticky buns to baking THE best NYC-style chocolate chip cookies from the fabulous Cupcake Jemma. From experimenting with new easy banana bread recipes to baking fancy celebration cakes for birthdays.
And I hosted my first ever baking class through Bakenight. It was so much fun! I already knew that I love baking. But little did I know that I enjoy very much teaching other people how to bake and sharing my love for homemade treats.
But after this little break, it was last weekend when I realized that I actually missed writing and sharing recipes. Maybe because I just found my new favorite vegan recipe: vegan orange chocolate cake. So I felt like I have to share it with you. Because it is so simple, yet so delicious. And you can’t tell it’s vegan. I promise. I shared it with some of my friends, and they didn’t even notice. This recipe is also great because you don’t need any fancy ingredients, which makes this the perfect recipe for any last-minute baking action.
This vegan orange chocolate cake is honestly my new favorite cake! And it saves the planet. So who is in?
Vegan Orange Chocolate Cake
Ingredients
- 1 tablespoon ground flax seeds
- 2 tablespoon water
- 100g whole-grain flour (I use spelt flour)
- 100g flour (I use spelt flour type 1050)
- 2 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 100 g raw cane sugar or coconut blossom sugar
- 250 ml nut milk (I used almond)
- 50 g coconut oil
- 50g nut butter or tahini
- 1 teaspoon apple cider vinegar
- 50 ml of orange juice
- Zest from 2 organic oranges
- 20 g raw cacao
- 30 g raw cane sugar or coconut blossom sugar
- 1 teaspoon vanilla extract
- 1 tablespoon nut milk
Directions
- Step 1 Preheat the oven to 180°C/350°F and grease a cake tin (Gugelhupf-style or a regular 26cm/10inch cake tin) with coconut oil.
- Step 2 Mix the ground flax seeds and two tablespoons of water and set aside.
- Step 3 Sift the flour, baking powder, baking soda, and salt into a large mixing bowl.
- Step 4 In a medium saucepan, mix sugar, milk, coconut oil, nut butter, orange juice, and orange zest, and heat until a homogeneous mixture forms, stirring occasionally. Remove from the heat and let cool slightly. Add flax seeds and apple cider vinegar and mix until smooth.
- Step 5 Using a spatula or a wooden spoon, gently fold the liquid ingredients into the flour mix. Transfer half of the mixture to the prepared cake tin.
- Step 6 Add cocoa powder, sugar, vanilla extract, and nut milk to the remaining batter and fold in gently. Scoop the chocolate batter on top of the light batter. Using a folk, gently stir the two batters, creating some sort of marble effect.
- Step 7 Place in the oven and bake for 30-40 minutes, until a toothpick inserted into the center of the cake comes out clean. Transfer to a wire rack to cool before removing the cake tin.
- Step 8 You can eat it as is or decorate your cake with melted (vegan) chocolate and some more orange zest.
