This broccoli and pea soup is the quickest and easiest meal you’ll ever make!
I love investing a lot of time cooking and baking: I enjoy the process of researching recipes, going to the grocery store, and spending time in the kitchen preparing the food. But sometimes, I just need something quick and healthy. And this is where this live-changing recipe for broccoli and pea soup comes in.
There are so many good things about this recipe:
- It only includes ingredients that you can stock up in your freezer and pantry. So you will always have them at home, no extra stop to the grocery store needed.
- You don’t have to be overly precise with the quantities. You can always add some more liquid if the soup is too thick.
- All you need is a blender to make this. You can use a pan to heat the ingredients before, but if you have a powerful blender (I use my Vitamix), you can pop everything in the blender and blend until hot. So minimum dishwashing involved.
- The recipe requires minimum time. In 10 minutes, you have a bowl of hot soup ready to enjoy.
- Although this is real fast food, it is super nutritious. Broccoli is one of my favorite vegetables, and it’s high in many nutrients, including fiber, vitamin C, vitamin K, iron, and potassium. Yet the peas and coconut milk make this a rich and satisfying meal. And it’s vegan, which is not only great for your body but also the environment.
- It’s versatile. You can easily swap the vegetables or add any additional ingredients. For example, you could use spinach or zucchini. Or you add some avocado for extra creaminess or chili if you like it spicy. I also use to add whatever herbs I have at hand, like mint or basil. To add some crunchiness, add some roasted seeds or soybeans. I found these roasted and salted soy seeds at Alnatura (an organic grocery chain in Germany), and I am obsessed! The variations are endless – and delicious.
- The soup freezes well. Whenever I make this recipe, I freeze any leftovers for another day.

Broccoli and Pea Soup
Ingredients
- 1 bowl (around 300g/10oz) frozen broccoli
- 1 bowl (around 300g/10oz) frozen peas
- 1 can (400ml/1 3/4 cups) full-fat coconut milk
- 1 can (400ml/1 3/4 cups) vegetable broth (or 1 can of water)
- Salt and Pepper, to taste
- Fresh herbs (optional)
- Toppings such as pumpkin seed oil and roasted seeds or soy beans (optional)
Directions
- Step 1 Place all ingredients into a large pan and bring to a boil.
- Step 2 Reduce the heat to low and cook for 5 minutes.
- Step 3 Using a blender (hand or standing), blend everything until smooth.
- Step 4 If you are using a high-speed blender (such as Vitamix), just put all ingredients directly into the blender and blend until smooth and hot, around 10 minutes.
- Step 5 Add any toppings you like and enjoy.
